Say for example you love California Cabernet Sauvignon, you may in fact like the Cabernet Sauvignon aspect of it rather than the California. It’s a great chance to explore the world by doing side by side comparisons, figuring out why land and wine making techniques make such an impact on a bottle of wine. This is a chance to take a deep dive into history, geography, geology and the law surrounding the world of wine.

Let’s enjoy some of the classic pairings and understand why they go so well together. The phrase “what grows together goes together” is always a great rule of thumb but the ideas of pairing wine and food in a complementary manner vs congruently is always a good way to prove your personal tastes. Figure out how and why the bitterness, acidity, fat, salt, alcohol and tannin work with and against each other.
